First of all for me, there was One Piece. The reason I like One Piece so much at first was because of how original the story was. I mean, a pirate manga? Never heard of one before. Every manga that I had ever come across before that was either mecha or fantasy themed. This is the first manga series that I actually enjoyed reading.
Then there was Bleach. The reason I started to read the manga was because I already watched a lot of the anmie until the fillers really started to get to me. So I thought, now that I'm into manga and all, I may as well pick up on Bleach from the very beginning. So I did. xD
After Bleach came Bakuman. Frankly, Death Note failed to captivate me for long enough. I just lost interest after the story got stale with the kidnappings and interrogations and what not. When I found out that the creators of Death Note were going to release another series, though, I was all over it, and have enjoyed it's random plot twists since. xD
D.Gray-Man is a manga that I haven't been into for very long, but I absolutely love the art in this manga. It's so dark and appealing.
I keep up to date with all of these series. Other than these I read Bloody Monday and Dragon Ball whenever new chapters are released.

Tokyo Babylon by CLAMP I list as my "retro fave", but it's still very engaging even now. The series does end, but the story between the characters don't actually conclude until X/1999
I do like xxxHOLiC by CLAMP as well, but the short chapter releases are pissing me off >_>
D.Gray-Man is surpisingly enthralling. Even what should've have been a lulzy mini arc ended up having dark overtones O.O
Ouran High Host Club was pretty good to I think. I dare say the anime and manga are on par with eachother though.
Bakuman, with a few slump-ish chapters, does keep your attention I think. It's an interesting manga about normal people xD
There's probably more I could name, but it's all I can think of right now that aren't yaoi mangas :P
EDIT: Okay, I forgot to add 07 Ghost to the list. I'm really enjoy the cute-sad-little-boy-with-a-tragic-past-but-still-perseveres-hero. I admit that I'm mostly just loving the overly cute, but beautiful, artwork. But the story is interesting, although focus is more on the characters if that makes sense.
Zombie Loan is pretty kewl too. Interesting story concept, and again, really loving the art. Lots of pretty boiz, but some cute girls too, and yep, fanservice in a lot of places =D

-Battle Angel Alita: one of the first manga series in my "collection". Very, very gory sometimes. Lots of cyborgs and fighting. It's still one of my favorites.
-Azumanga Daioh: A very light-hearted and funny manga that is good to just pic up and read every now and then.
-Yokohama Kaidashi Kikou: It's proably biggest slice of life mangas out there. Though it seems as though nothing ever actually happens, it's a very relaxing manga to read.
-Gantz: Now that I think about it, I haven't read this manga in a while. I sort of stopped after the first phase ended....
-Genshiken: A pretty funny manga about otaku and Japanese pop culture.

XXXholic: It's so awkward and twisted and Yuko is so amazing. The fact it ties in with other Animes and manga as well intrigues me more so.
D.Gray-Man - A great piece of work by Katsura Hoshino, keeps me reading and reading because there is so much in-depth information she keeps us holding onto and hoping for. It keeps its arcs to a minimum and when it does use them they're either hilarious or enticing.
Bleach - Though its dragging a bit now I enjoy it. Never cutting out the gore or the fight scenes especially the Espada. They keep me guessing.

DOGS: Bullets & Carnage, baby.
It's kind of got your run-of-the-mill action story, and stock character personas, but the art is frickin' awesome, and Shirow Miwa seems to be doing a good job of storytelling so far.
Hana Yori Dango, for sure. It's translated title is Boys Over Flowers. I've been collecting it since forever, it seems like. It's got something for everyone, but some people just can't get into it because it IS very VERY girly. Even though it's nothing like a Sailor Moon or Marmalade Boy storyline, it's pretty down to Earth with a twist of being in the world of high society. The art is old, but watching it slowly transform into being refined and very beautiful has gotten to me, I guess. ^-^ It's by far my favorite.
But I do also really like Love Hina, Dragon Knights, MARS, Fruits Basket, Marmalade Boy, and Fushigi Yugi a lot.
One of my favourite mangas so far that I have read has got to be Rave Master and my second favourite has got to be Elemental Gelade.

DeathNote, my all time favorite. It was different, smart, creepy as hell, and on top of that, funny. what a great combination. Not the mention the art style drew me in (not a big fan of the huge-eyed anime style) I have to say that the anime version is great as well, they transferred it nicely. given, I haven't seen it ALL, but it's still very nice.
I also like Vampire Knight...because I love vampires =)
and I can't forget Kuro Shitsuji. one HELL of a butler. I need to read more of it.
My favorite mangas? Well... I've read a good number of them... Fortunately, a lot of them that people listed in this thread are some in which I have never heard of or read before. Gives me new manga to look into when I have the time.

D.N. Angel by Sugisaki Yukiru:
Some people base their experience with this form of entertainment off the experience from watching the anime. I can tell you now that the anime does this great series no justice whatsoever. I started reading D.N. Angel.. well. According to wikipedia, the first volume debuted in North America in 2004. Which was when I started it. So I've been reading this series since its come out - and it's the only manga series so far in which I have purchased every single volume. And I don't "collect" manga. Hehe. If you like boys, you can appreciate the handsome men, if you like girls, you can appreciate the "moe moe kyun~" of the girls. And if you don't like either and prefer your left and/or right hands - well.. hey. You'll enjoy the art?
Ouran High School Host Club by Hattori Bisco:
I'm sure people have preconceived notions about what they think this series is about. It's not all fanservice.. Wait.. was there even fan service? Well, I don't remember.. but that's good because I only remember the important things. Despite the group of rich, good looking high school boys, each of them have their own inside story, in which they have to battle with other people and themselves, and the commoner Fujioka Haruhi is there to help them along the way. The old saying "Money can't buy happiness," is proven via this manga. Controversy, betrayal, romance - it's all in there. Give it a shot. :3~

I am all about Slice of Life. So if you like that, if you like high school girls, and if you like music - K-ON is a pretty neat choice. It's simplistic humor and plot is just what I like. Sometimes, I don't have enough time to follow all of the Shinobi, or the Soul Society... so.. this is good. I admit that I watched the anime before I read the manga, but it's nearly close either way.

I don't really read a lot of manga anymore. I'm not really too into the mainstream things like Bleach, Naruto, etc.
But...
Ayashi no Ceres (or Ceres, Celestial Legend as they call it):
This was my first manga I started reading. I liked it, but it started getting harder to keep up with because new volumes were practically always sold out...so I probably made it about half way through the series until I just kinda broke away from it.
Gensoumaden Saiyuki / Saiyuki Reload:
Totally badass. I loved it. I finished Saiyuki and got about 6 or 7 volumes into Reload. That was a long time ago so I don't know what's going on in the series anymore. I also lost all of my manga when I started living at my grandma's house, so I don't remember which volume I was exactly on. I don't really want to go out and buy the rest of the series, and risk skipping a volume or getting a duplicate.
Switch:
I picked this up out of curiosity because it looked interesting. Plus...it was on sale because Waldenbooks was closing. XD
Anyway, turns out I liked it and got hooked. I have up to volume 7...which is bad because the series is done at 13 and they're all released. I haven't gotten anymore because it kinda dropped off the face of the earth. Borders stopped selling it after vol 5 so I had to resort to Barnes & Noble for 6 and 7. But the last time I was there, they didn't seem to have Switch anymore either...so I'm at a loss. I may have to order online.
Legal Drug:
...okay yeah a boy-love. The only CLAMP I bothered to pick up. It upset me that they just stopped at volume 3 and haven't done anymore since. It was interesting, to say the least.
Gravitation:
Another boy-love. I got into this one late, so I never got to pick up all of the volumes before Borders stopped selling them. (Borders is suckish.) So I only got up to about 6 or 7. (Noticing a pattern) I liked what I read though...I ended up watching the anime and spoiling the rest of the manga for myself.

It's really difficult for me to pick favourites. I have over two hundred manga that I love.
Angelic Layer:: First series I ever read. It will always be in my top. It also started my love of CLAMP.
Tsubasa: Reservoir Chronicle:: I started reading this when I was fourteen and it will finally end a few months after I turn nineteen. My best friend bought me my first volume as a christmas gift and since then i've tried to buy the next volume the week it comes out.
FullMoon Wo Sagashite:: I noramlly buy manga when the art catches my eye. Arina Tanemura's artwork is different from what normally attracts me but I fell in love after the first volume. The story was just so cute and romantic.
A few others include:: Magic Knight Rayearth, Chibi Vampire, Marmalade Boy and Vampire Knight.
I think Silver Diamond can definitely be added to my favorites.
I randomly found it while browsing Barnes and Noble.
It looked interesting, so I bought volumes 1 and 2.
I wish I had the money to buy more, as it was pretty much instant love. (I wasn't expecting to buy anything that day, so I didn't grab any extra cash. dangit.)

I haven't read the One Piece manga yet, but I've been watching the anime. I'm only on 60-something so far, but I'm in LOVE with it so far!
As for Bleach... I like Bleach, so I keep up with it, but the power ups got a little ridiculous. That's just my opinion.
I read this for a looong time, but then once I realized it took forever for the author to update, I just kind of stopped... Maybe I'll pick it back up some day.
Personally, I really like High School of the Dead. As far as I know, this is the only real zombie manga out there, at least it's the only good one. The story and the characters are amazing so far. The author is kind of slow on this too, but it's all good. I like it enough to keep checking.
Another one that I HIGHLY recommend is The Liar Game. I recommend this especially to lovers of Death Note. It's an very intelligent manga. I couldn't stop reading it... But I warn you: the author hasn't updated in forever. It's been on a hiatus for more than half of a year, so if you read it all at once, you're gonna feel like crying.
One that I really liked and that my friend and I spazzed over everytime a new volume came out was Vampire Knight. It had loads and loads of potential, and was just generally good. I haven't finished it (hell, I don't know if the manga itself is finished) but it was great. Otherwise, I liked Hot Gimmick, Kare Kano, Tsubasa: Resevoir Chronicle, Lovely Complex, Honey and Clover, Cardcaptor Sakura, Golden Boy. So yeah, I read a lot of shoujo back in the day but I liked action ones too.
Oh trust me, if you like the anime then you'll love the manga, and right now the manga is AWESOME and it has been for some months, except for one little bit of filler regarding Luffy as a child. Bit of backstory that wasn't really needed, even if (I think) it was only to set up a future character, but we'll probably all know about that soon enough.
And as for Bleach, it has been an utter failure for a long time. It's gotten to the point now where I'm definitely considering giving it up all together, BUT the last chapter seems to be taking the story a step in the right direction for me. Time will tell.
Have you tried reading Bakuman yet? I highly recommend that one.
